The best plant-based baking to come out of Veganuary

Are the summer holidays dragging on and you’re getting a little bored? Pass the time with some baking to help satisfy your sweet tooth cravings! In the spirit of Veganuary we thought we’d put together some of our favourite sweet-treat vegan recipes to help prove that you can still enjoy your favourite snacks on a vegan diet. See below for some easy recipes that will not only make your kitchen smell heavenly but is perfect for your sweet arvo or dessert snack. 

Vegan Chocolate Chip Cookies
Prep time: 15 mins
Cooking time: 20 mins 
Serves: 24 (3-inch) cookies

Ingredients: 

  • 28g okara flour (or just use more all-purpose flour instead)
  • 188g all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 250g packed light brown sugar
  • ¼ cup plus 2 tablespoons hot water
  • 100g coconut oil, melted
  • 84g unsweetened almond butter (well stirred before measuring)
  • 2 teaspoons vanilla extract
  • 210g vegan chocolate chips
  • 70g chopped walnuts, optional

 

Preparation: 

  1. Line baking sheets with parchment paper. Preheat the oven to 170°C.
  2. In a medium bowl, whisk okara and all-purpose flours, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, whisk the brown sugar with hot water. Add the coconut oil, almond butter, and vanilla and whisk until smooth. Stir in flour mixture. Stir in chocolate chips and nuts (if using).
  4. *Baker’s Secret: Cookies are extra delicious if you rest the dough for 1 hour or more before baking.
  5. Place heaping tablespoons of dough 2” apart on lined pans. Bake 14-16 minutes in preheated oven, rotating pans half way, until cookies are golden brown. Set pans on a rack to cool.

Vegan Horlicks Brownies
Prep time: 10 mins
Cooking time: 45 mins 
Serves: 9-12 

Ingredients: 

  • 390ml dairy-free milk 
  • 50ml melted coconut oil 
  • 150g melted dark chocolate 
  • 90g Horlicks Vegan 
  • 135g plain flour 
  • 50g coconut flour 
  • 80g light brown sugar 
  • 50g cacao powder 
  • 1 tablespoon of ground flaxseed 
  • 50g dark chocolate chunks 
  • 100g white chocolate chunks  

 

Preparation: 

  1. Preheat oven to 180°C and grease or line a rectangular baking tin with parchment paper.   
  2. In a large bowl combine the melted dark chocolate, melted coconut oil and dairy free milk. Combine and then add the Horlicks Vegan, plain and coconut flours, light brown sugar, cacao powder and ground flaxseed.   
  3. Combine well and then fold 2/3 of the white chocolate and dark chocolate chunks through the mixture.  
  4. Pour the mixture into the tin and flatten so it’s smooth. Now scatter the remaining chocolate chunks on top and gently push down.  
  5. Bake in the oven for 40-45 minutes or until a toothpick comes out clean.   
  6. Allow to cool before removing from the tin, slicing and devouring!

Vegan Banana Bread 
Prep time: 15 mins
Cooking time: 20-25 mins 
Serves: 8 

Ingredients: 

  • 4 ripe bananas
  • 3/4 cup of sugar
  • 1/2 cup of neutral flavour oil
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup apple or pear puree
  • 1 tablespoon vanilla

 

Preparation: 

  1. Preheat the oven to 175ºC.
  2. In a bowl crush the bananas until there are no large pieces. Add the sugar and oil. Mix well until everything is well integrated, add the applesauce and vanilla. Keep stirring until everything is well mixed.
  3. Add the flour, salt, baking soda, and baking powder. Mix well.
  4. Pour the mixture into 12 muffin pieces mould or in a loaf bread mould.
  5. Bake it until you insert a toothpick and comes out clean, 20-25 min.
