How long does the course go for?
This accelerated course runs for 18 months. Ideally apprentices are offered ongoing employment at the end of the 18 months as a skilled Commis Chef with Merivale. A 3-year commitment is required for ongoing learning and working in the kitchen.
What are the entry requirements for the course?
Merivale are looking for inquisitive, respectful, honest, resilient, growth-orientated individuals who are passionate about food, and ready to hit the ground running. That's is really!
How does this program differ from others?
This is an all-expenses-paid, internal Cert3 program, run by Merivale - a well respected industry name that qualifies you as a chef, in an accelerated fashion. It balances theory, practice, and on-the-job experience, whilst giving you exposure to many of Sydney's best restaurants and the chance to learn from Australia's best-known chefs. It's also run by Peter Doyle, who's inspiring, engaging and pays one on one attention to apprentices.
Which Merivale venues/ chefs are involved?
Nearly all of the Merivale venues will be involved and matched to candidates. Executive chefs will assist their head chefs to manage and mentor the apprentices in their venue.
