Marmont at Crown Casino is recently opened an all-day and night venue, inspired by the laid-back yet sophisticated vibe of Southern California, fused with the vibrant energy of Melbourne. Our venue offers a seamless blend of innovative cocktails, exclusive Pacific style ales, and an extensive wine list, alongside a Californian-inspired menu. We aim to create a space where our guests can enjoy everything from a casual drink with friends to an elevated dining experience. To help us achieve this, we are looking for a visionary Beverage Director who can craft and lead an world class program.


Job Description:
As the Beverage Manager at Marmont, you will be the driving force behind our beverage program, responsible for curating an innovative and diverse selection of drinks that embody the spirit of Marmont. You will work closely with the culinary team to ensure that our beverage offerings perfectly complement our menu, while also overseeing the day-to-day operations of the bar. Your expertise in mixology, wine, and craft beer will be key in creating a memorable experience for our guests, whether they are enjoying a cocktail by the promenade or an exclusive event in our private salon. We are looking for innovation in the preparation and presentation of cocktails and we hope that it is you that can bring this to life.


Key Responsibilities:

  • Beverage Program Development: Lead the creation and execution of an innovative beverage menu, including cocktails, wines, beers, and non-alcoholic options, with a strong focus on Californian and Pacific influences.
  • Menu Pairings: Collaborate with the culinary team to design food and drink pairings that enhance the overall dining experience.
  • Staff Training: Develop and implement comprehensive training programs for bar staff, ensuring they have a deep knowledge of our beverage offerings and can deliver exceptional service.
  • Quality Control: Oversee the consistency and quality of all beverages served, from preparation to presentation, maintaining the highest standards of taste and aesthetics.
  • Inventory Management: Manage beverage inventory, including ordering, stock rotation, and waste reduction, to ensure cost efficiency and product availability.
  • Event Coordination: Work with the events team to create bespoke beverage experiences for private events, including custom cocktail menus and exclusive tastings.
  • Guest Experience: Engage with guests to understand their preferences, provide recommendations, and ensure a personalized and memorable experience.
  • Trend Analysis: Stay updated on industry trends, emerging products, and guest preferences to keep Marmont at the forefront of the beverage scene in Melbourne.
  • Financial Oversight: Develop and manage the beverage department budget, monitor sales performance, and implement strategies to maximize profitability.

 


RECOMMENDED SKILLS/EXPERIENCE

Bar Manager

REQUIREMENTS

Qualifications:

  • Extensive experience as a Beverage Director, Bar Manager, or similar role in a high-end restaurant, bar, or hospitality venue. Deep knowledge of mixology, wine, craft beer, and spirits, with a passion for creating innovative and unique drink offerings.
  • Strong leadership and team management skills, with a proven track record of developing and motivating staff.
  • Excellent communication and interpersonal skills, with the ability to engage guests and build lasting relationships.
  • Experience in inventory management, cost control, and financial planning
    within the beverage sector.
  • Creative mindset with the ability to identify and respond to beverage trends
    and customer preferences.
  • A strong network of contacts within the beverage industry, including suppliersand distributors.
