Ace Hotel Sydney is our first-ever spot in Australia, set in the verve of Surry Hills. Inspired by the neighbourhood's vibrant rhythm, Ace Sydney is home to a bustling public Lobby alive nearly nightly with DJs and performers, a rebellious art program and sunken lounge just off the Lobby bar. We’ve also got three distinct restaurants led by award-winning culinary pros, including local legend Chef Mitch Orr’s Kiln; our oasis for fresh, seasonal fare called LOAM; and a day-to-night laneway café, Good Chemistry. Now all we need is you.
About Kiln
Named Good Food Guide's Best New Restaurant of the Year 2023, this daring menu is curated by the culinary alchemist Mitch Orr, whose inspiration emphasises Italian, Japanese, and Southeast Asian flavours. Here, the ingredients harness the open flame, smoke, and smoulder of the kitchen's wood-burning grill. It's all about sharing the love—the entire menu is crafted for communal feasting, and we're talking top-notch, sustainably sourced ingredients that roll with the seasons.
Elevating the dining experience, our carefully curated beverage selection features a wine list with natural, low-intervention, and small producers, offering unique flavours that complement the menu's temporal offerings. Additionally, our seasonally crafted cocktails highlight the best of locally sourced spirits, perfect for enhancing each dish or savouring on their own. Join us on a journey where exceptional cuisine effortlessly blends with thoughtfully selected drinks, taking your dining experience beyond the ordinary.

About the Role
Incorporating the fusion of hospitality and expertise we are open 6 days a week varying from lunch to dinner as our team turns every interaction into an opportunity to craft unforgettable moments through elevated culinary experiences with originality and flair. You will arrive into a lively atmosphere as our open kitchen executes award-winning recipes, warmed by the glow of a wood fire burner, where every dish touches the lick of the flame. Your role goes beyond crafting dishes – you'll be the driving force during service, ensuring we keep the service flowing seamlessly as you independently run the section.
About you
You are a calm and positive team player with a keen desire to deliver a memorable dining experience with a passion for food and the customer journey. You thrive in a collaborative team setting with a ‘lead by example' approach and are adept at following instructions. You have outstanding communication skills which will be utilised with both the kitchen and the front of house team as the kitchen and wood fire hearth provides an open-plan view of the restaurant, meaning high-quality dishes and cohesive service are key to customer satisfaction.
