The Opportunity
We’re on the hunt for a talent‑driven Chef up to Senior Chef (CDP - Senior Chef de Partie level or Junior Sous Chef) to join our kitchen team at Le Bon Ton. If you've got a passion for slow‑smoked barbecue, Southern‑inspired hospitality, and thriving in a dynamic, late‑night setting, this is your stage.
What You'll Be Doing
Master the smoke – Lead execution of low‑and‑slow barbecue, including brisket, ribs, pork shoulder, and Gulf‑style specialties, all cooked over ironbark or local fruitwoods.
Menu finesse – Prepare substantial sandwiches, bar snacks, and Southern‑flavoured dishes that honor tradition while adding creativity.
Pace‑aware production – Maintain precision across high‑volume services, including late‑night opening hours and weekend shifts.
Mentor kitchen crew – Guide and support junior cooks and Chef de Parties, ensuring consistency in technique, flavour, and plating.
Quality standards – Uphold hygiene, food safety (WHS, HACCP), and equipment standards in a bustling, character-filled kitchen.
Collaborate creatively – Work with the Head Chef and beverage team to sync food and drink programs, optimizing guest experience.
What You'll Bring
Proven experience – At least 2+ years in a similar role at a premium, concept‑driven restaurant.
Qualified - Level IV or higher in Commercial Cooking
BBQ and Southern cuisine expertise – Hands‑on experience with smoking techniques, Southern American dishes, and related flavours.
Team leadership – A natural mentor with strong interpersonal skills who inspires creativity, precision, and calm under pressure.
Operational know-how – Competent in managing prep, stock control, and kitchen systems.
Hospitality mindset – Driven to deliver consistently excellent food experiences, even late into the night.
Resilience – Unflappable during peak service, adaptable to the fast pace, and solutions-focused.
Clear communication – Able to delegate tasks, brief team effectively, and address guests or staff with clarity and confidence.
