About the Role

We are currently looking for passionate, motivated and experienced Commis Chefs to join the CBD (Café, Bar and Dining) kitchen team on a casual basis. CBD is located on the ground floor of the hotel and offers a relaxed environment perfect for casual catch ups.

Reporting to the Executive Chef and Executive Sous Chefs, the Commis Chefs will be responsible for the assisting with the management of CBD operations and supervision of the kitchen brigade. The role will provide essential support to the Sous Chefs and kitchen leadership with menu development, managing costs and driving revenue.  

The successful candidate will have a passion for delivering high quality products and experiences for our guests, excellent communication skills, and be a team player who works well with others by leading from the front with a positive attitude.

Key Responsibilities

  • Prepare and present menu item to a high level
  • Work with and coordinate the work of cooks and apprentices in the preparation and production of food
  • Coordinate the stewarding team to ensure all kitchen hygiene and safety procedures are followed
  • Assist with menu preparation and ensure adequate supplies are available for service
  • Supervise the kitchen in the absence of senior chefs, delegating duties and responsibilities as necessary

REQUIREMENTS

Skills and Experience

  • At least 3-4 years previous experience as a Commis Chef – hotel experience highly regarded
  • An extremely high standard of food preparation, presentation and service
  • An up to date knowledge of current and emerging food trends
  • Excellent hygiene and food safety standards with knowledge of HACCP processes
  • Capabilities in menu design and food costing
  • Flexibility to work as required across multiple kitchens with a variety of shifts in a 24/7 operation
  • Excellent grooming and presentation
  • The ability to handle pressure, multi task and get the job done
  • Excellent communication skills
  • Demonstrated passion and creativity within your craft
  • Possesses self-motivation and an ability to work autonomously

Qualifications Required

  • Certificate IV in Commercial Cookery
  • Completion of cookery apprenticeship 
  • Food Safety Supervisor


Interview required
