Duty Manager / 2IC

Start: 1 Nov, 2025 Where: Prahran, VIC Type: Full time Pay: Award wage

JOB DESCRIPTION

Death or Glory are looking for a full-time Duty Manager to join our tight-knit team. Right in the heart of Chapel Street, we have a loyal guest base coming in for our warm and welcoming service and great drinks/food. With regular events and DJs in our front bar, pool table down back with a photobooth, plus tiki bar and old-timey saloon themed function spaces upstairs, there is always something going on.

About the Role

We’re looking for a friendly, motivated duty manager to support the venue manager with the general running and maintenance of the bar. You’ll oversee nightly operations, inspiring our longstanding, tight-knit team to maintain the high standards we expect on every shift to keep our guests coming back. Our number one objective is to provide the best possible guest experience.

You will also assist in stock management, including taking deliveries, entering invoices and recording/managing wastage. We have regular functions, sometimes two per night that require good time management to ensure our private spaces are all ready to go before guests arrive. Functions can differ drastically depending on the event, so being able to think on your feet is essential.

We normally have a very friendly clientele coming in for a good time, but experience in conflict management is preferred as chapel street has a very busy nightlife with potential of intoxicated guests; RSA needs to be upheld at all times, especially with a large licensing presence on the street.

This is a Full-time salaried position, with an annual salary classified under the Restaurant Industry Award Rate Level 3, with a minimum of 38 hours per week.

Key Duties

  • Oversee the operations across the bar, kitchen and function spaces, including opening and closing the venue following company procedures
  • Financial responsibility across the venue, meeting daily targets, keeping tills stocked, correcting any issues with payments and cashing up/floating the bars.
  • On-shift stock management, ensuring stock procedures are followed correctly to track any wastages so stocktake variances are minimised.
  • Ensure RSA, health & safety and licensing requirements are followed at all times on shift.
  • Be constantly aware of guests in the venue, ensuring we can deliver the best service possible. Be able to spot and quickly rectify any customer issues and go the extra mile to make their visit memorable.

About You

You are a confident and friendly person who is ready to take charge and represent the establishments and the values we stand for so that everybody feels welcome. You love meeting new people, have a passion for hospitality, and get a kick out of going above and beyond for your guests. You are ready to work in a tight-knit team and maintain a high level of respect that you have towards staff and they have towards you as to make a happy and healthy work environment. Living a healthy lifestyle is important to you.

  • Previous management experience in a busy bar/restaurant.
  • Availability to work weekends and late nights (not exceeding 2am).
  • Leadership skills, with a strong emphasis on being able to keep staff motivation/morales high at all times - a bar isn’t fun if the staff don’t want to be there.
  • Naturally friendly, outgoing and confident in engaging with all guests to promote a memorable guest experience everytime
  • Full Australian working rights with citizenship/permanent residency.
