JOB DESCRIPTION

Having undergone a monumental restoration, The Continental Sorrento has reopened as the preeminent leisure site of Australia. A multi-faceted offering caters for a broad range of patrons, bringing a piece of luxury to everyone. The development stretches across 4000m2 of hospitality space which includes the Conti Bar, Beer Garden, Beach Rd Promenade, Atrium restaurant and bar, Barlow cocktail bar, Scott Pickett's signature restaurant - Audrey's, multiple function & events spaces, and an opulent pool deck.

The KickOn Group team, led by Craig Shearer, in collaboration with the Scott Pickett Group, delivers world class food, beverage and customer service setting a new benchmark for excellence in the hospitality industry.

About Your Role

The Head Chef of Events will;

  • Drive and lead the team’s success through communication, experience, discipline, productivity, quality, presentation consistency and creative drive.
  • Develop, maintain and ensure food safety standards, preparation, presentation and cooking techniques are established and monitored to meet The Continental Brand Standard guidelines and maintained at that level. 
  • Work with the culinary team, take corrective action where appropriate, and within company guidelines if standards are not met.
  • Establish effective employee relations by cultivating a positive work environment where learning and personal development are benchmarks by which quality improvement is driven.
  • Effective daily management and control of the Hotel Continental kitchen’s food cost, portion control, labour cost, productivity and wastage.
