JOB DESCRIPTION

Sun Kitchen is an award-winning modern Chinese fine dining restaurant located within Albert Park Lake specializing in Cantonese and Sichuan cuisines. We have been awarded Delicious Top 100 Restaurants in Victoria 2019 by Herald Sun and the Australian Good Food Guide Reader’s Choice 2020 – Chinese.

[ Job Responsibilities ]

  • Direct, develop and maintain cuisine concepts and consistent standards of excellence for food preparation and presentation
  • In conjunction with the Restaurant Manager actively contribute to and develop strategies that ensure the achievement of quality standards, best practice business objectives and profit targets
  • Establish and maintain recipes, including photographic presentation, of all menu items in food outlets
  • Supervise and maintain quality control for outgoing meals and incoming produce
  • Ensure daily monitoring and control of all food purchasing and stock control
  • Develop and maintain effective and professional working relationships with the local food community and primary producers
  • Recruit, lead, develop and motivate kitchen team. Conduct regular appraisals and provide feedback to maximise performance.
  • Liaise with Director and other relevant Department heads on menu, guest feedback and service issues

RECOMMENDED SKILLS/EXPERIENCE

Executive Chef

Please note: You should have a minimum 2 years previous experience in the above or similar roles.


REQUIREMENTS

  • 10+ years of progressive work-related experience in food & beverage and managing a kitchen with a team of chefs in 5 star venues
  • Relevant commercial cookery qualifications
  • Experience in the financial management of food operations including budgets, wage cost forecasting, staff rostering, sales analysis and reporting
  • A passion for embracing local and regional produce suppliers
  • Demonstrated hands-on approach with a passion for food and presentation
  • Excellent PC skills, e.g. Microsoft Office
  • Excellent communication skills, both written and verbal
  •  Excellent team building skills, interpersonal skills, and a proven leadership ability
  • Diploma or Bachelor’s degree in Hotel Management, culinary arts, or related field
