Olivine
Guided by your curiosity, explore the hidden nooks and corners of a space locked away for the past 170 years. Warm dim lights and high drapes, distant sounds of Champagne popping and hushed laughter ignite epicurean chatter.
Settle into a luxurious booth with the only distraction being the company you’re in, and the occasional visit to the cellar. Flick through the chapters of the Book of Wine and unravel the mysteries of the wine world. Discover stories and vintages of iconic producers and rare treasures.
Graze on delicious small plates. A house made terrine with a local Pinot or perhaps Champagne and caviar would be more your style? Engage in late night heart to heart chats. Make fond memories.

The Opportunity
This is a pre-opening role in a venue sure to become one of the country’s most exciting wine bar openings, presenting a fantastic opportunity to the ideal candidate to work in a unique project alongside top sommeliers.
We are currently seeking a dynamic Head Bartender to support the Restaurant & Bar Manager in leading the bar operation. Think of walk-in wine rooms and booth seatings in original 170-year-old bluestone cells, heavy drapes, recessed lighting, lux furnishings with Champagne & caviar service and a world-class wine list. The main bar will be in the division hallway which will be the focal point of the development. Due to open in February 2023, this bar is also part of a 5-star accommodation offering with 19 luxury rooms. Service is in the form of curated experiences around educational but entertaining tastings reserved for hotel guests until 5pm, when it then opens to the public till 11pm.
With proven technical skills and the ability to lead a team, this role will be responsible for managing and executing day-to-day operations. You will deliver a consistently high standard of service and experience that will capture the minds and hearts of our guests.
Opening a new business is not for the faint-hearted, so a proactive, driven and detailed work ethic is essential. More than anything else, we’re looking for a leader to build a fabulous team embraced by a fun and supportive working culture.

The Precinct & Operator
These venues form part of a larger hospitality development on the Pentridge site managed by TFE hotels. The other parts of the development include and fully immersive experiential urban retreat, a events and weddings brand, museum and tourism offering in conjunction with National trust, and an Adina Apartment Hotel tower. This development will complement the existing planned Brewdog Brewery opening, along with on-site retail centre.
