JOB DESCRIPTION

Terasu, Japanese, fun relaxed modern Japanese dining destination 

Ardo is a brand new $88 million dollar hotel due to open in Townsville in late 2023. Its arrival brings elevated relaxation and rejuvenation to North Queensland’s premier leisure and entertainment precinct, nestled on the edge of the Coral Sea with uninterrupted views across to Magnetic Island. It's sprawling hotel suites; world-class dining outlets – Marmor and Terasu; day spa; and signature rooftop pool deck and bar combine to celebrate the spirit of the tropics with unique Ardo flair. 

Ardo is the latest addition to Morris Group’s tourism offering which as well as The Ville Resort-Casino, includes Northern Escape Collection’s Orpheus Island Lodge, Daintree Ecolodge, and Mt Mulligan Lodge.

Ardo’s Terasu will be invited to experience a relaxed but edgy take on traditional Japanese cuisine. This is a hands on role, working alongside your team in delivering meals of a high standard to all of our guests, whilst achieving departmental goals and KPI's.

Ardo is seeking an experienced Japanese Head Chef to lead the culinary team within Terasu, the properties Japanese dining destination

RECOMMENDED SKILLS/EXPERIENCE

Head Chef

Please note: You should have a minimum 2 years previous experience in the above or similar roles.


REQUIREMENTS

Requirements 

  • Formal trade qualification in a relevant field
  • Extensive knowledge of Japanese and Fusion cuisine 
  • Minimum of 5 years’ experience in Japanese cuisine as a senior chef
  • Able to create new menu ideas and assist with menu preparation
  • Proven ability to work effectively as part of a team
  • Ability to multitask and maintain 5-star standards of quality and service
  • Strong understanding of produce, culinary techniques, and kitchen equipment
  • Ability to work in a fast-paced, high volume environment
  • Keen eye for detail
  • Keen interest and passion for keeping up-to-date with industry trends
  • A working understanding of and ability to maintain food safety standards and HACCP
  • Excellent communication skills
  • Flexibility to work various shifts including weekends, nights, and public holidays
