JOB DESCRIPTION

Bar Biscotti is a well established café located in North Strathfield that has been operating for over 16 years. After using the last half of 2020 to renovate and reset for 2021, they have designed a New York-styled bar/kitchen fit-out that has created new energy in an open and friendly space. The food direction will be Italian / Mederterainian with a focus on full-flavoured brunch and small plates. There will also be a range of high-quality premade paninis to service takeaway demand and weekly specials for gym go-ers and local mums. The open kitchen has just been completely overhauled with all new equipment and appliances. 

About The Opportunity

We are looking for a Head Chef to join the company in North Strathfield, NSW.

This position is a hands-on service-oriented role, designed to nurture the existing kitchen team and provide strong leadership and support. 

Reporting directly to the General Manager some of your responsibilities will include:

  • Set up the kitchen with cooking utensils and equipment in an organised and efficient matter
  • Monitor food costs and KPIs
  • Uphold hygiene and cooking standards across the team
  • Develop fortnightly specials
  • Ensure all dishes are being prepared and presented consistently
  • Cook food in a timely manner
  • Delegate tasks to kitchen staff
  • Inform wait staff about daily specials
  • Ensure appealing plate presentation
  • Supervise Cooks and assist as needed
  • Slightly modify recipes to meet customers’ needs and requests (e.g. reduce salt, remove dairy)
  • Monitor food stock
  • Experiment with recipes and suggest new ingredients
  • Ensure compliance with all health and safety regulations within the kitchen area

About You 

The successful candidate will have:

  • 2+ years of experience as a Head Chef or kitchen leadership role 
  • A creative flair with a passion for food and hospitality 
  • A background in Italian or Mederteranian cuisine (highly desirable)
  • Strong understanding of costings and stock/budget control
  • Excellent communication skills and strong leadership capability
  • The ability to multi-task in a fast-paced environment 
  • Strong knowledge of health and safety practices
  • Attention to detail and a passion for producing quality food and happy customers

REQUIREMENTS

Requirements and skills

  • Proven work experience as a Chef and Managed a Team of Kitchen Staff
  • Hands-on experience in a cafe kitchen and development of cafe menu
  • Confidence to experiment with different flavours
  • Advanced knowledge of culinary techniques
  • Leadership skills and ability to train team members
  • Ability to remain calm and uphold standards in a busy environment
  • Excellent time management abilities
  • Up-to-date knowledge of cooking techniques and recipes
  • Familiarity with sanitation regulations
  • Culinary school diploma preferred
