JOB DESCRIPTION

Undergoing a complete transformation, the iconic Rydges Melbourne is reopening in late Autumn 2023 and is on the hunt for a Head Chef Conference & Events just as sharp as its brand-new look.

This is our flagship in the making; this is Rydges, reimagined. With a complete refurbishment of all 370 rooms, suites and apartments, a new terrace overlooking Her Majesty's Theatre, interactive fitness centre and rooftop pool. The new Rydges Melbourne will offer unforgettable hospitality. 

Rydges Melbourne will feature eleven Meeting and Event spaces spanning over 1,500 square meters across two levels. Reporting into the Executive Chef, we are after a hands-on Head Chef, Conference & Events standout who will be responsible for managing the day-to-day operations of our new C&E department. With no two days the same, this role will see events of 350 pax sit down dinners in our state-of-the-art ballroom to intimate 10 pax private dining experiences and everything in between ... What we are looking for:

  • A quirky attitude with the desire to push innovation and creativity developing seasonal and rotating menus across conference and events space 
  • A passion for your team and developing your people. 
  • Commitment to maintaining high and consistent standards of products across all food and beverage outlets.
  • To have a full knowledge of, and practice the hotel’s established occupational health and safety guidelines (OH&S)
  • Excited to work collaboratively and creatively with the Executive Chef, Front of House team including the Director of Food and Beverage, Outlets Manager, and the Restaurant Manager.
  • In depth understanding and experience managing financial reporting including: menu costing, COGs, labour, wastage.
  • Must have minimum 2 years’ experience in similar positon
  • Ability to work a range of shifts including weekends, nights, public holidays
  • Strong written and communication skills
