Head Chef Position at Waterloo Hotel

The Waterloo Hotel Venue is on the hunt for a Head Chef to join the team! We are a Brisbane landmark, with spectacular Art Deco architecture and a proud facade dominating the busy intersection of Ann Street & Commercial Road in Fortitude Valley. 


With the finest selection of wine, premium beer and fresh food, The Waterloo is the perfect establishment to make an impression and leave you with lasting memories.


As a Head Chef, your role will involve:  

  • Running of the day-to-day operations of the kitchen  

  • Inspiring and leading a multi-skilled team  

  • Working along side the Venue Manager and Executive Chef to drive revenue through the business 

  • Leading, developing and mentoring a team  

  • Menu planning and design  

  • Controlling food costs, and wastage to hit KPIs  

  • Writing and controlling an effective roster

Please note: You should have a minimum 2 years previous experience in the above or similar roles.



  • 2+ years of experience in a Head Chef role  

  • Confident and creative cooking style  

  • Ability to lead a team  

  • Ability to ensure all policies, procedures and standards are current, effective, and clearly communicated  

  • Maintain a high level of standard while cooking in a fast paced environment  

  • Multi-task effectively and ensure all deadlines are met with suppliers as well as the Venue Manager and Executive Chef
