About the Role

We have an opportunity for a passionate, motivated, and experienced Pastry Chef to join our hotel kitchen team and lead the pastry department in a full-time (38 hours per week) capacity. The role will involve producing plated desserts for our outlets and banquet operations as well as handmade chocolates and pralines, cakes, petit fours, and of course the famous Bacchus High Tea. 

Reporting to the Executive Chef, this is a hands on role where you will be responsible for directing, overseeing and delivering pastry production for all areas of the hotel. You will work closely with the rest of the kitchen leadership team on menu development and testing, as well as managing costs and driving revenue. The successful candidate will have the ability to motivate and inspire a team by leading from the front with a positive attitude and a passion for delivering a high quality product to our guests.

Passion for your work and attention to detail is a must along with the ability to work quickly and efficiently, and communicate effectively. 

Key Responsibilities

  • Daily management and food production of pastries and desserts
  • Prepare and present menu items to a high level maintaining excellent presentation standards
  • Implement and maintain quality control procedures 
  • Collaborate with Hotel Management in the creation, design and implementation of new food items and concepts across all outlets
  • Work with kitchen leadership to effectively coordinate work schedules within your department, ensuring they are within budget, business expectations, and industrial legislation guidelines
  • Train, lead and inspire the Pastry brigade to ensure a highly skilled, well organised and motivated team

RECOMMENDED SKILLS/EXPERIENCE

Please note: You should have a minimum 2 years previous experience in the above or similar roles.


REQUIREMENTS

Experience and Skills Required

  • Previous experience in a supervisory role within a pastry kitchen. 
  • An extremely high standard of food preparation, presentation and service
  • An up to date knowledge of current and emerging food trends
  • Excellent hygiene and food safety standards with knowledge of HACCP processes
  • Strong capabilities in menu design and food costing
  • Knowledge and experience in budgeting, rostering, stocktaking and ordering 
  • Flexibility to work as required across multiple kitchens with a variety of shifts in a 24/7 operation
  • High-level computer literacy 
  • Excellent grooming and presentation
  • The ability to handle pressure, multi task and get the job done
  • Excellent communication skills both verbal and written 
  • Demonstrated passion and creativity within your craft
  • Possesses self-motivation and an ability to work autonomously

Qualifications Required

  • Certificate IV in Commercial Cookery
  • Completion of cookery apprenticeship 
  • Food Safety Supervisor


Interview required
