The Senior Chef de Partie role will be a part of the menu execution for all things ground floor and level 1 of the unique Ace Hotel, just a brief 10-minute walk from Central Station.
Here Ace has something for everyone starting on the ground floor;
Good Chemistry - Is a breathtaking day-to-night cafe, which yields delicious specialty barista coffee from Mecca, tasty sweets and divine savory items by day, before transforming into an intimate bar nightly.
Loam - Our full-table service restaurant has 65 seats, serving breakfast, lunch and dinner seven days a week with dishes encouraged to share. Here the kitchen team creates masterpieces incorporating seasonal delights with a particular emphasis on veggies as ingredients are sourced from independent farmers & producers.
The Lobby bar - Somewhere anyone can come and immerse themselves in the smooth ambience our DJ provides paired with craft cocktails, hot and cold snacks and shareable small plates to ensure a great experience.
Brick, Tyne & Clay - Moving up from the ground floor there are three bespoke private events spaces and private meeting rooms to meet a variety of needs and event styles from conference, banquet & cocktail just to list a few.
About the Role
Immerse yourself in the culinary charm of our award-winning venue, as you work collaboratively with the Head Chef to design and coordinate beautiful dishes. Your role will cover Ace Hotel’s ground-floor restaurant, cafe, lobby bar dining, bespoke event menus, and in-room dining experiences. You will be working a 5-day week on a rotating roster including weekends and nights as we are open 24/7 as you execute a variety of exceptional recipes. Your role will include helping mentor the junior chefs during service, receiving and managing stock levels for sections, prep ingredients for service and assisting with menu and specials development all while ensuring compliance with HACCP standards in the kitchen. Desired experience in pastry/dessert crafting to help lead the development of our sweet menu items fitting for all occasions including breakfast, lunch and dinner. Your role goes beyond crafting dishes – you'll be the driving force, ensuring we keep the service flowing seamlessly.
About you
You are a calm and positive team player who is passionate about food and the customer experience, with a ‘lead by example' approach. You can communicate concisely with the kitchen and front of house team with the ability to take direction effortlessly as the kitchen bustles with high energy. As operations unfold you can work autonomously while executing high-quality dishes and cohesive service that are fundamental to the customer experience. Previous experience as a Chef de Partie in a diverse offerings kitchen is ideal with duties involving training junior chefs, ordering and stock management. You will need to have a thorough comprehension of kitchen safety protocols to help foster a safe working environment as you work collaboratively with other team members.
