JOB DESCRIPTION

We are seeking a Senior Sous Chef to join our team and assist the Head Chef with kitchen operations and crew management on a day-to-day basis. By planning, organising, managing, and guiding the crew to Manolas Brothers Bistro standards, you will ensure that every section of the kitchen functions at maximum efficiency. You'll be a motivated and dynamic hospitality professional and consistently lead by example to effectively motivate a team. Lovely local clientelle and a very supportive team. Very stable business in successful operation for over 27 years. 

 


RECOMMENDED SKILLS/EXPERIENCE

Sous chef

Please note: You should have a minimum 2 years previous experience in the above or similar roles.


REQUIREMENTS

 

  • 3+ years of proven experience in a Sous Chef Role
  • Plan & create menus and weekly specials
  • Experience and repertoire of Mediterranean dishes 
  • Taking responsibility for the food production with a hands-on approach
  • Identify, develop and maintain establishment policies and procedures
  • Experience managing and maintaining a food safety programme, including documentation OH&S standards and procedures
  • Impart knowledge, skills and training to all kitchen staff  
  • Ability to foster successful connections and relationships
  • Demonstrated ability to work independently as well as manage a team
  • Approachable and encouraging personality with a sincere interest in the day-to-day success of the team and the business
  • Solid understanding of financial budgeting, food expenses, and labour costs.

  • Ability to manage competing priorities during preparation and busy service periods 
  • Excellent attention to detail
  • Calm and collected demeanor 
  • Commercial cooking qualification or similar experience
  • Experience with a timesheet and attendance system
