JOB DESCRIPTION

SOUS CHEF

Vinesmith seeks a highly skilled, passionate Sous Chef to assist in leading its new team.

Vinesmith’s Melbourne Cellar Door is the newest addition to the low-profile Vinesmith wine group, which includes Blue Pyrenees, Glenlofty Estate and Decameron Station – producers of some of Victoria’s most iconic wines.

This vibrant and innovative new setting at the Treasury Gardens entrance to Flinders Lane combines a Restaurant, Wine Bar, and Cellar Door in a contemporary space designed by international architects Denton Corker Marshall. It will offer a world-class dining experience to complement our exceptional wine portfolio.

Sous Chef at Vinesmith is a pivotal role in bringing our vision to life, responsible for a Francophile menu that showcases the best Australian ingredients —simple, fresh, and creative.

About the role:

  • This is a key leadership position in a dynamic and exciting venture.
  • Assist in crafting and executing a fine dining menu that reflects the essence of Australian Francophile cuisine.
  • Assist in the creation of standardised recipe cards and ensure their continued use.
  • Deliver consistent quality and culinary finesse to delight our customers.
  • Develop, lead and mentor the culinary team in conjunction with the executive chef to deliver excellence in this fast-paced environment.
  • Work with suppliers to seek out and cost the best fresh, local produce across the seasons.
  • Manage inventory and ordering for the kitchen, including setting up the kitchen for service.
  • Assist with rostering, labour cost controls and food costings
  • Manage the kitchen food safe plan, train junior chefs on food safety
  • Creative flair to help develop exciting food pairings that showcase our premium wines. 
  • Partner with the management team to keep enhancing the overall offer and experience.

RECOMMENDED SKILLS/EXPERIENCE

Chef de Partie

Please note: You should have a minimum 2 years previous experience in the above or similar roles.


REQUIREMENTS

About you:

  • Proven experience as a Sous Chef or similar role in high-end culinary establishments.
  • Well versed in Australian and French cuisine, with a keen understanding of fine dining principles.
  • Strong leadership skills to inspire and guide junior kitchen staff.
  • Commercially astute capable of delivering a profitable and sustainable kitchen.
