JOB DESCRIPTION

In 2022 Vista Hospitality Group opened two new hotels in Brisbane CBD. The first to open was voco™ Brisbane City Centre which offers 194 guest rooms, 11 meetings rooms, 2 F&B outlets, a Fitness Centre & Rooftop Pool. Soon to follow was the Hotel Indigo Brisbane City Centre with 212-rooms and the incredible new Izakaya Publico Restaurant and Bar 1603. 

The new hotels are managed and operated by Vista Hospitality Group a new business within the Australasian hospitality sector, that offers a suite of resources and operational advantages, uniquely tailored for owners and partners.

Our Izakaya Publico restaurant is a creative and inspired Japanese dining experience in Brisbane’s city centre. Our experienced chefs display customary core cooking techniques throughout the carefully curated food menu. Grilling, steaming, frying, and cold dishes inspire the substantial zensai and share plate philosophy. Locally sourced seasonal produce offers guests the opportunity to explore the unique and flavoursome foods our region has to offer. 1603 is our contemporary speakeasy inspired bar located within Izakaya and proudly offers Japanese and local beer, wine, and cocktail favourites with a sake twist. Named after the first year Izakaya was said to have begun, 1603 is a truly memorable experience unto its own highlighted by a sense of connectedness to the neighbourhood.

As the Sous Chef, you will report to the Head Chef. Your role will assist in leading a team and know when to add those little touches and small thoughtful gestures that make every stay special. You will be a passionate and experienced in creating culinary delights that excites our guests.

REQUIREMENTS

Position Requirements:

  • Be a driver in all aspects of food preparation and follow our ethos of minimal food wastage.
  • Have the experience to manage and lead the team through very busy in the Restaurant, Banquets and In Room Dining, without compromising on quality. 
  • Ensure a positive relationship is maintained between back of house and front of house.
  • Manage HACCP and ensure the highest hygiene standards are maintained at all times.
  • Keep informed with changes and developments introduced by the Head Chef and Management team in the selection, production and presentation of the menu and be ready to contribute with your creative ideas.
  • Display a high degree of flexibility in acceding to “off the menu” guest requests. Offering comparable alternatives where guest’s original request cannot be delivered to their expectations.
  • Remain calm, confident, and have a hands-on approach especially during busy periods. 
  • Provide regular feedback, coaching, support and guidance to the team in order to create a positive environment and achieve ‘excellence’ and ‘engagement’ within the team.
  • Manage the ordering and have an understanding of the P&L and how to manage costs.
  • Assist to complete rosters and manage the payroll and productivity to reflect operating forecasts and budgets.
  • Assist in effective training and targeted development.

You will possess:

  • The ability to curate memorable experiences for our guests through the quality of your food.
  • Previous hands on experience as a sous chef or senior CDP in a busy top end restaurant or hotel. 
  • Strong leadership skills and ability to mentor and develop team. 
  • Professional verbal communication skills and strong eye for detail.
  • Impeccable hygiene, grooming and presentation. 
  • Strong work ethic and flexibility to work over 7 days a week rotating roster. 
  • Superior organizational, time management and follow through skills.
