Sous Chef for New Pizzeria by Mary's is Opening Soon!
A highly anticipated new pizzeria is opening its doors in inner Sydney, bringing authentic, high-quality New York City and Detroit-style pizza. We are committed to using the best ingredients and traditional techniques to create an exceptional dining experience and are seeking a passionate and experienced Sous Chef to join our opening team.
The Opportunity
We are looking for a dedicated and skilled Sous Chef to work closely with the Head Chef in managing all kitchen operations. This is a hands-on role where your expertise in different pizza styles will be crucial to our success. If you are creative, thrive in a fast-paced environment, and are excited by the challenge of launching a new brand, this is the role for you!
Key Responsibilities
Pizza Production: Oversee and execute the preparation, cooking, and quality control of our signature NYC and Detroit style pizzas.
Team Leadership: Assist the Head Chef in training, mentoring, and supervising kitchen staff.
Kitchen Management: Manage inventory, control stock, minimise waste, and ensure efficient ordering.
Quality & Consistency: Maintain the highest standards of food quality, presentation, and consistency across all dishes.
Compliance: Ensure strict adherence to food safety standards, hygiene practices, and WHS regulations.
Prep & Production: Manage daily mise en place and general food preparation for all menu items.

Skills & Experience (Must-Haves)
Proven Experience: Minimum of 5 years of experience as a Sous Chef, Chef de Partie, or a similar leadership role in a fast-paced pizzeria environment.
Pizza Specialisation: Essential and non-negotiable experience working with and understanding diverse pizza styles. Experience with hand stretching is highly regarded.
Work Rights: Must have valid and current working rights in Australia.
Leadership: Strong communication and team management skills.
Motivation: A passion for high-quality food, a positive attitude, and the ability to work under pressure.
