Opportunity
We are seeking experienced and versatile hospitality professionals to join our team as Trade Waiter - encompassing roles such as Formal Service Waiter, Silver Service Waiter, Drink Waiter, Sommelier and Wine Steward.
This unique opportunity is ideal for candidates who excel in polished, high-end dining environments and have deep beverage knowledge (especially wine), with a commitment to exceptional service and attention to detail.
Key Responsibilities
Table & Reservation Management: Setting up, arranging and resetting tables to impeccable presentation standards; managing bookings and prioritising guest seating.
Guest Reception & Service: Greeting customers warmly, presenting menus and beverage/wine lists, offering knowledgeable recommendations and guiding guests through their dining experience.
Order Taking and Reservations: Taking food and beverage orders, liaising with kitchen and bar staff to ensure seamless and timely delivery. Taking and booking in reservations.
Beverage & Wine Service: Serving drinks and meals with precision; opening bottles, pouring wine and beverages, mixing cocktails/spirits when required; ensuring correct glassware, proper serving temperature and attentive drink service.
Food & Drink Delivery: Serving food and beverages to guests with professional timing, etiquette, and presentation.
Table Clearing & Reset: Clearing dishes, glassware and cutlery between courses and at the end of service; returning items to kitchen/bar; removing empty bottles; refreshing and replacing glassware as needed and refilling drinks making sure each guest is well looked after.
Guest Payment & POS Operation: Presenting final bills, processing payments via POS or cash register, ensuring accuracy and compliance.
Upselling & Recommendations: Suggesting menu items or beverage pairings (especially wines) to enhance guest experience and boost sales — particularly relevant in fine-dining contexts.
Cellar & Wine List Management (Sommelier/Wine Steward specific): Assisting with cellar duties, managing wine inventory, coordinating stock rotation/storage, updating and curating wine lists (in collaboration with senior staff), ensuring proper storage and presentation of wines.
Team Collaboration & Guest Experience: Working seamlessly with FOH, bar, and kitchen teams to ensure smooth service; maintaining a polished, friendly and professional demeanour at all times; contributing to a premium guest experience.
Compliance & Standards: Ensuring adherence to relevant health, hygiene, and licensing regulations (e.g., RSA), and maintaining the highest standards of cleanliness and safety.
What We’re Looking For
Wine & Spirit Education Trust (WSET) Level 2 or equal experience
Diploma in Hospitality or proven substantial experience in a comparable role
2+ years minimum relevant experience in fine-dining or upscale hospitality environments.
Exceptional communication, interpersonal skills, and polished presentation.
A strong guest-service focus with attention to detail and the ability to anticipate guest needs.
Ability to work under pressure, manage multiple tables, and maintain composure during busy service periods.
Practical knowledge of point-of-sale systems, cash handling, and payment processing.
Flexibility to work evenings, weekends and public holidays as required by business demands.
