Something has been happening behind the iconic bluestone walls in Pentridge. Soon we will welcome people behind the walls and share the exciting new developments. 

Two new venues will open in February, both situated in the original bluestone buildings. Seating 200 in North & Common and 110 in Olivine this will be a significant operation. 

North & Common

This suburb has changed. A lot. But what hasn’t changed is its openness to people of all kinds. 

To new ideas and shared ideals. North & Common stands for the shared ideals of Melbourne’s inner north. Multiculturalism. Simple things done well. And the ability to find beauty and community where others wouldn’t expect it. 

We strive to be a place the north celebrates, and celebrates at. A place that’s always welcoming and warm. Kind of like an extension of your living room, but with a preposterously large fireplace. It doesn’t matter what your history is. It doesn’t matter where you come from. We can all sit down to a good meal and find our common truth.

Olivine

Guided by your curiosity, explore the hidden nooks and corners of a space locked away for the past 170 years. Warm dim lights and high drapes, distant sounds of Champagne popping and hushed laughter ignite epicurean chatter. 

Settle into a luxurious booth with the only distraction being the company you’re in, and the occasional visit to the cellar. Flick through the chapters of the Book of Wine and unravel the mysteries of the wine world. Discover stories and vintages of iconic producers and rare treasures. 

Graze on delicious small plates. A house made terrine with a local Pinot or perhaps Champagne and caviar would be more your style? Engage in late night heart to heart chats. Make fond memories.

At Olivine, you step outside of time, away from the commotion of the world. 

The opportunity

This is a pre-opening role. 

This incredibly unique venue is sure to be buzzing with 330 seats between the various restaurant and bar areas, including a large team of food and beverage enthusiasts ready to take care of our guests. We are currently seeking a dynamic Restaurant & Bar Manager to lead the front of house Restaurant and Bar operations. 

With proven technical skills and the ability to lead a team, this role will be responsible for managing and executing day-to-day operations. You will deliver a consistently high standard of service and experience that will capture the minds and hearts of our guests.

Opening a new business is not for the faint-hearted, so a proactive, driven and detailed work ethic is essential. More than anything else, we’re looking for a leader to build a fabulous team embraced by a fun and supportive working culture.

The Precinct & Operator 

These venues form part of a larger hospitality development on the Pentridge site managed by TFE hotels. The other parts of the development include and fully immersive experiential urban retreat, a events and weddings brand, museum and tourism offering in conjunction with National trust, and an Adina Apartment Hotel tower. This development will complement the existing planned Brewdog Brewery opening, along with on-site retail centre.
