Gelato, a staple of the Fratelli dessert menu, is an Italian style of ice cream with a rich flavour, velvety texture and typically contains less air and fat than ice cream.
All 16 flavours of gelato, including two exquisite sorbets, are hand-crafted daily and on display at Fratelli Fresh Darling Harbour. Up to nine flavours feature at Fratelli Fresh restaurants at Alexandria, Crows Nest, Bridge Street, Macquarie Street, Entertainment Quarter, Westfield and Walsh Bay.
Gelateria’s typically use a generic base, known as fior di latte gelato and add ingredients to construct different flavours. At Fratelli Fresh Chef Riccardo creates a unique recipe for each flavour and incorporates premium produce from local suppliers such as Delicious Dairies in Marickville and Velluti’s in Homebush, as well as top-quality international suppliers Heilala Vanilla and Cacao Barry.
“When making gelato, simplicity is key. In Italy we like to hero our ingredients and use only two or three to enhance the flavour,” says Riccardo.
“At Fratelli Fresh, we’re really replicating the Italian way, using only premium and top-quality ingredients to ensure the best results.”
Fratelli’s gelato flavours are: black forest, cookies & cream, blueberry & yoghurt, tiramisu, espresso, chocolate crunch, rum & raisin, mascarpone & figs, Nutella, hazelnut salted caramel, pistachio, snickerone, vanilla, coconut, and raspberry and passion fruit sorbet.
Guests can purchase one scoop ($5), two scoops ($7), three scoops ($8) or in 500ml tubs ($12.50) and litre containers ($21) to takeaway.
