Meet Jai, Head Sommelier and Barman at Lobster Cave

Jai Singh is Head Sommelier & Barman at Lobster Cave & Le Bar Supper Club and is this month’s employee of choice nominated by The Ferg Group. Read below about his experience at his workplace and the hospitality industry.
 
About Jai:
Tell us a bit about yourself – how did you get into hospitality?
I have a passion for eating and experiencing different cuisines. I love to provide customers with the ultimate dining experience. 

How did you find yourself in this role?
With hard work - working many hours, undertaking learning and development courses and mentoring. I started as a kitchen hand, then worked In the bar learning the basics, eventually I became bar supervisor, then manager. Now I oversee the bar and can run the restaurant (a section, floating and maître’d).

Where do you see yourself in the next 5 years?
Continuing to oversee the bar of current and new venues that we operate - pushing the boundaries and innovation.

Who inspires you?
My Dad.

What do you do when you’re not working, any hobbies?
Beer & wine tasting and gardening.

What’s your favourite meal?
Dumplings.

What’s your favourite TV show?
The office.

What’s the one utensil you can’t live without?
A wine glass.

What’s your favourite function you’ve ever worked?
Christmas functions every year.

What’s your favourite thing to make?
Any classic cocktail.
 
About Lobster Cave & Le Bar Supper Club: 
What do you love most about working for the group?
The people, we are like a family. I have worked with The Ferg Group for over 15 years.

What do you love most about working in your current venue?
The fast-paced environment, the customers & my co-workers.

What do you love most about your current role?
Working with different types of people and training new staff and building the bar of our new venue, Le Bar Supper Club.

What do you love about hospitality?
Getting to know new people, experiencing Incredible food & wine.

What’s the funniest thing that’s ever happened on shift?
When old ladies try to charm me.

What’s your most memorable hospitality experience?
I once made 50 margaritas within a 30 minute period.

Who’s the most famous person you’ve ever served? What did they order?
Shane Warne, ordered a beer from the bar.

What’s your favourite type of event to work?
Cocktail parties. 
 
About The Hospitality Industry: 
COVID-19 had a huge impact on the hospitality industry. What have been the main challenges for you during the past year? How have you learned to overcome them?
Income strain was the biggest challenge, we overcome It by Introducing take away service and takeaway cocktails.

What do you think will be the biggest game changer in hospitality over the next 5 years?
Supporting Australian locals will Increase - strengthening our community.

How can hospitality be made better?
More government support.
