Meet Craig, Assistant General Manager at Applejack

Oct 05, 2022

Meet Craig, Assistant General Manager at Applejack

Applejack opened a fresh new venue “RAFI” last week in North Sydney. The opening of this vibrant, contemporary multidimensional 300-seat restaurant and bar, set to “rejuvenate” the North Sydney business district was assisted by Craig Kerrison, Assistant General Manager. The Applejack team recently caught up with Craig to hear about his career progression at Applejack and what he’s most excited about for the upcoming new venue.

Craig has been a part of the Applejack team for over 8 years now, starting as a bartender at The Butler in Potts Point after just arriving from the UK, and has worked his way up to Manager, and now Assistant General Manager of RAFI.

We had the honour of attending RAFI’s venue opening last week. Pictured above is
Culinary chief Patrick Friesen (left) and executive head chef Matias Cilloniz.

Craig is loving his time at Applejack, competing in the annual staff cocktail competitions, travelling to New Zealand and South Australia for wine trips and being in the winning teams at Applejack staff parties. Craig exclaims he loves “The hands-on approach from Ben & Hamish (Applejack’s owners), working closely with different departments & being given the opportunities to learn. AJ has given me a fantastic platform to push myself & pursue my own personal goals in Food & Beverage.”

Craig encourages others to join the  Applejack team for its ongoing commitment to promoting progression opportunities and allowing employees to have input on the product. What he is most looking forward to in joining the RAFI team is “Working closely with Matias and Patrick (Head Chefs) as well as experiencing a bright/vibrant setting. I am also really looking forward to working with Amandine’s (Sommelier) Wine List which has taken a more classical approach whilst not compromising values. It looks fantastic.”
